1、西红柿、葱、姜、香菜洗净,葱、姜、香菜切末。

2、西红柿先切对半,去除根部硬芯,再切牙状,再将牙状从中间切断,大的柿子可切三段。

3、锅烧热放油,加虾皮炸黄,再放入姜炸黄。

4、加入西红柿炒至出浆,加足量水烧开。

5、烧汤过程中把葱、香菜末、盐、调料放入欲盛汤的大碗中,另外再点香油。

6、汤开后转小火再煮5分钟,出味。

7、开大火,鸡蛋打一个小口,向锅中甩蛋液,边甩边移动鸡蛋,防止在同一个地方鸡蛋熟后呈大块。

8、取一个小碗,放入少许土豆淀粉,加水搅匀。

9、搅匀的淀粉液倒入滚开的汤中,如果可以边倒边搅动汤,要不然倒入淀粉液后,马上快速搅动汤也行。

10、待汤再次煮至大开,就可以出锅了,关火,把汤倒入事先准备的大碗中,搅匀调料,并使盐化开即可。
